Skirt Steak Fajita Taco Night

I probably do a taco night every few weeks. It is one of the first things I put together while learning how to cook. Usually I do this with ground bison meat, but there's some bison flank steak in the freezer that needs to be used, so it gets to be made into yummy taco meat. Components: 1)  Taco meat (Meat, cumin, paprika, chipotle chili powder, garlic, salt, pepper) 2) Roasted corn and black beans (I use 1 can of each, fried in some avocado oil until the corn starts to char.) 3) Guacamole (Avocado with garlic, salt, pepper, lime juice) 4)  2 Sliced bell peppers and 1 onion to fry with the meat. Other Miscellaneous Taco Stuff: 1) Shredded Iceberg Lettuce 2) Shells (can be whatever you prefer, today I used taco salad bowls) 3) Salsa / Spicy mayo 4)  Spicy Mayo (Siracha and mayo mixed together) 5)  1 lime. Chicken with a Lemon Thyme Infused Cream Sauce

About a week ago I picked up a lemon thyme plant. I got it thinking of this interesting blueberry muffin recipe I saw using the herb, but it's sitting out on the porch looking cute, and I wanted to use it for a dinner. Most recipes that come up when searching for meals using lemon thyme involve regular thyme and lemon juice. Apple Celery Cranberry Chicken Salad

 This is a copy of a salad from a restaurant from the west side of Washington where I used to live. My mom used to make this a lot, and now I make it often when I need an easy meal during school days. Ingredients for the salad: 1 Granny smith apple cut up 3 Large stalks to celery cut up 5 oz Spinach 1/3 cup dried cranberries (or to taste) 2.25 oz Sliced almonds Ingredients for the chicken: 3 chicken breasts Garlic Salt, Pepper, Italian Seasoning to taste (really whatever seasoning you think goes well on chicken. Improvised Sausage Cheesy Chowder

So, the original plan for today was a hearty meaty stew using bison chip steak. Think medieval tavern food, fit for a knight who just got back from rescuing a maiden from a dragon. I woke up this morning, went to go grab the chip steak from the freezer to get that defrosting, and there was no chip steak to be had.  I was salty, but then I saw the turkey kielbasa sausage hanging out in the freezer below where the chip steak should have been. I remembered that I also had some andouille sausage in the fridge leftover from when I made jambalaya a while ago, and then a plan started to form. Special Memorial Day Breakfast

Scones and the mango I found on sale at the grocery store :) I would love to say that the scones were ~made from scratch~ but I used a box mix. I require much more caffeine to do fancy baking in the morning. I substituted the water in the mix for milk to make them a little richer. They were really yummy! This is the box I used if anyone wants to make scones too.
