Fish Tacos

This is my mom's favorite dish, and this version is much healthier than the versions with deep fried fish sticks. My local grocery store stocks pretty much only one type of white fish at a time, so I always go by that section and see what's there. Last week, there were some good looking cod fillets for sale, so I grabbed them and planned this dish for the week. These tacos are also very versatile, I make them differently every time. Today, I thought I had tomato in the fridge when I really didn't, so I didn't have that in the tacos like I usually do. Also, I was planning to slice my avocado, but they were getting old and had a couple brown spots to take out, so I gathered the good parts and made guacamole instead. Another perk of this recipe is that the fish is made in an air fryer, which makes it super easy, and our oven requires a blood sacrifice to heat up in a reasonable amount of time so it's nice to avoid that.  Ingredients Any white fish 2 limes 2 small avoca...

Butter Chicken

Indian cuisine has to be one of my favorites, maybe after Japanese. This take on butter chicken is great because it uses a canned sauce, saving a bunch of time, and it's all made in one pot. Curry is also great because it can take all sorts of random veggies that you have in your fridge. Potatoes, carrots, onion, peppers, tomatoes all can be added to a curry, and when covered in the delicious sauce, the dish becomes cohesive. I've made this butter chicken before, but I made it a but more fancy this time, and the whole family loved it. Stuffed Manicotti Pasta

Recently, my parents came back from grocery shopping with these really large noodles that I've never seen before, and they wanted me to try to make something with them. They looked like oversized penne noodles. A google search told me that they were manicotti, and it seems like a lot of the recipes on the internet for this type of pasta use the same ingredients as lasagna. This is the meal plan for the coming week :). Everything other than the butter chicken is something I've never made before, so this will be really fun! I'm on summer break now, so I'll have a lot of time to get creative in the kitchen. If I get inspired, I might try making some homemade pasta this week and store it for use later.

Yakisoba

I shared my recipe for Udon yesterday, and continuing that theme, this is my yakisoba recipe. If you want an Asian noodle dish, but want a stir fry rather than a soup, yakisoba is for you :). It's also a very easy thing to make, only taking one pan. Ingredients: 3 packages pre cooked yakisoba noodles (I get ones with a seasoning packet that I add to the dish. If you can't find yakisoba noodles, lo mien noodles will do as well).  4 cups frozen stir fry vegetables. 1 medium onion minced. 9 chicken tenders, cut up into chunks. 1 cup yakisoba sauce. 1/2 cup water 2 1/2 tbsp mirin. 1 tbsp miso paste. Start by chopping up your onion and frying it in whatever oil you like. I would recommend sesame oil, but I didn't have any, so I used avocado oil. One Pot Udon

So, I'm sorry I haven't posted in almost a week... I've been graduating high school, and I thought I was only going to take a day or two off, but then life happened. I took my college finals, got my high school diploma, and then I'm getting my AA degree this Friday lol.  Anyway, this is one of the meals that I made during that hectic time. Udon is a yummy one pot meal that is perfect for cold days... but for someone who is perpetually cold, I can have it any day, and my family can't say anything because I'm cooking :).  Ingredients: 1-ish lb. pork. Pork belly is traditional, but it's not at my grocery store, so I just get the fattiest piece of pork I can find. Usually, that's country style boneless ribs. 4 green onions, separate the white onion-y part and the green part.  Udon noodles. I get them in single serving packs, so I use 3 packs for three people. Old Bay Shrimp Skewers

There's something fun about stabbing bits of meat with a wooden stick, baking it, and later ripping of said bits of meat off said wooden stick with your teeth in a barbaric fashion. Skewers are a fun and simple dinner to make, but they look fancy at the same time.  Ingredients for Shrimp Skewers: 2 lbs. shrimp 1/4 cup olive oil 3 tbsp Old Bay seasoning Salt and Pepper to Taste Wooden Skewers Preheat your oven to 350 F, and soak your skewers so they don't char in the oven. Then, stab your shrimps on the skewers, making sure that they aren't too crowded so they cook evenly. (Ignore that there's some pink parts on the shrimp, I had to microwave mine since I was a doofus and didn't give them enough time to defrost lol). Mix your olive oil with your spices, and brush that on your shrimp.  Bake for around 20 minutes. Teriyaki Salmon

This was a busy cooking day! The plan was baked salmon, but we didn't have any in the freezer, so a trip to Costco led me to some beautifully fatty Copper River salmon fillets. The package I got had 4 servings, and that extra serving (there's 3 people in this house) led me to make 2 other dishes lol. Ingredients for Teriyaki Baked Salmon : 1 1/2 salmon fillets (1/2 a fillet per person) 6 tablespoons of teriyaki sauce A drizzle of olive oil to coat the salmon Salt, garlic, and pepper to taste I served the salmon with some delicious air fried identity crisis potatoes (I'm not sure if they're home fries or roasted potatoes). Candied Pecan, Celery, Cranberry Salad with Baked Chicken

I have a favorite salad at a restaurant here called Lulu's. It's called the farmstand salad, and it has a really interesting combination of blue cheese, candied pecan, and cranberry. These different ingredients go really well together, especially with the different texture of the crunchy celery. The salad serving size seems to shrink a little bit every time I get it at Lulu's, and the chicken on top is an extra 7 dollars, so it's way more economical to make my own. The chicken doesn't cost a kidney, and I can have my fill of my favorite salad.  This is the week's meal plan! My inner pasta fiend is looking forward to trying to make homemade ravioli. My family showed me an interesting fried potato recipe on Youtube last week that I'm excited to try as well.  I will be graduating high school this saturday, so I will be too in shock to post that day.

Bacon Wrapped Scallops with Ceasar Salad

 These bacon wrapped scallops are a decadent side dish. I've done these with big bay scallops, but I had some cute baby ones hanging out in the freezer, so I wanted to do this recipe with baby scallops. This recipe is fairly simple Ingredients: 1 lb package of bacon 3 scallops for each slice of bacon you're using (since one lb can be a different number of slices, and you'll want to use 1/3 of a slice for each scallop. Bigger bay scallops will need 1/2 a slice instead) 1 toothpick for each scallop 3/4 stick of unsalted butter Fresh herbs of choice (I used rosemary but it's personal preference) Garlic powder to taste Salt and Pepper Serving Suggestion: 2 ceasar salad kits. Preheat your oven to 375 F. Start by cutting your bacon into thirds, soaking your toothpicks in water (to make sure they don't char in the oven), and drying off your scallops.
